Mexicans’ deep attachment to chili (acı biber) consumption is more than a simple taste preference; it’s an evolutionary outcome based on thousands of years of agricultural history, geographical necessities, and biochemical adaptations.
The objective reasons underlying this culture can be examined under three main headings:
Historical and Agricultural Origins
- First Domestication: The native land of chili pepper (Capsicum) is the American continent. Archaeological findings indicate that chili was domesticated approximately 6,000 to 8,000 years ago in Mesoamerica (especially in Mexico’s Tehuacán Valley) by the Aztecs, Mayans, and Olmecs.
- Basic Nutritional Cycle: Corn, beans, and squash were the staple agricultural products of the region. Beyond adding flavor to this relatively monotonous diet, chili became integrated into the diet as a vital nutrient source, providing vitamins C and A, which were deficient in a corn-heavy diet.
- Historical Functions: In Aztec culture, chili pepper was not just a food; it was also a means of tax payment, a medicinal component, and even a punishment/warfare method used by its smoke.
Evolutionary and Biological Functions
- Thermoregulation (Cooling through Sweating): People living in hot climates like Mexico need to regulate their body temperature. Capsaicin, the active substance in chili pepper, stimulates the body’s heat receptors, convincing the brain that the environment is hot. This triggers sweating, and the body naturally cools down as the sweat evaporates.
- Antimicrobial Protection: Before the invention of modern refrigeration methods, preserving meat and other foods without spoilage in hot climates was a major problem. Capsaicin and other compounds in chili have strong antimicrobial properties. By slowing down bacterial and fungal growth, it prevented food poisoning and, in the evolutionary process, enabled chili-consuming societies to gain a survival advantage.
Neurological Effects and Flavor Depth
- Endorphin Cycle: Capsaicin does not stimulate taste buds on the tongue but directly stimulates pain receptors. The brain perceives this burning sensation as physical damage and releases high amounts of endorphins and dopamine to alleviate the pain. This biochemical reaction creates a slight euphoria (happiness/relief) sensation after eating spicy food.
- Aroma Complexity: From a gastronomical perspective, the use of chili in Mexican cuisine is not just based on “hotness.” Hundreds of different chili varieties (Jalapeño, Poblano, Habanero, Ancho, Pasilla) exist, each offering distinct aroma profiles—earthy, smoky, fruity, or acidic. This is used as an ingredient that deepens the chemical profile of the dish.
