Spanish Russian Salad: What is Ensaladilla Rusa?
In Spanish cuisine, ensaladilla, meaning “small salad,” is one of the country’s most popular classic tapas, usually referring to the Ensaladilla Rusa (Spanish-style Russian salad) recipe.
Distinguishing Features of Ensaladilla Rusa
Although structurally similar to Russian/American salad, there are very clear ingredient and texture differences that distinguish Spanish ensaladilla:
- Rich Seafood: The most characteristic feature of the Spanish version is the addition of high-quality tuna (atún) or sometimes shrimp to the mixture.
- Smooth Texture: Potatoes and carrots are chopped into much smaller cubes compared to our recipes, sometimes even lightly mashed with a fork to achieve an almost integrated, spreadable consistency with mayonnaise.
- Characteristic Additions: Diced boiled egg is standard. Green olives and capers are also frequently added to the mixture for acidity and salt balance, or the top is garnished with strips of roasted red peppers.
In Spain, it is typically served in bars and restaurants as a cold appetizer with crispy mini breads called picos or regiñás.
How to Make It?
The most important secret when making a traditional Spanish Ensaladilla Rusa is for the ingredients to fully integrate with the mayonnaise, achieving a spreadable, smooth consistency. The potatoes should not meet the mayonnaise before reaching room temperature, and the ingredients must be chopped very finely.
Ingredients
- Base: 3 medium-sized potatoes, 1 large carrot
- Protein: 2 cans of quality tuna (drained), 2 boiled eggs
- Seasoning & Texture: 1 teacup of pitted green olives (finely chopped), 1 tablespoon of capers (optional)
- Sauce: 1.5 cups of quality mayonnaise, 1 teaspoon of lemon juice, salt
- Garnish: Strips of roasted red pepper
Preparation
- Boiling: Place the potatoes and carrot with their skins in plenty of salted cold water and boil until tender. Boiling with the skin prevents the potato from absorbing too much water. Separately, boil the eggs until hard (approximately 9-10 minutes).
- Cooling and Chopping: Remove the boiled vegetables from the water and wait for them to cool completely (if they remain warm, they will melt the mayonnaise and make it oily). After peeling, chop the vegetables and boiled eggs into the smallest possible cubes.
- Preparing the Mixture: In a large bowl, combine the chopped potatoes, carrot, egg, thoroughly drained and flaked tuna, chopped green olives, and capers.
- Saucing and Consistency: Add the mayonnaise, lemon juice, and a pinch of salt to the mixture. Mix all ingredients without mashing them, but ensure they are thoroughly combined. For the authentic Spanish consistency, you can lightly mash some of the potatoes with a fork while mixing.
- Chilling and Serving: Smooth the top of the salad and garnish with strips of roasted red pepper. Chill in the refrigerator for at least 2 hours, ideally overnight. Serve cold with crispy bread slices or rusks.
